The 24/7 bistro
Stefano Catenacci:
"This will be a food bar with a louder and more lively, intense atmosphere than the Caina restaurant. Here you will be able to truly smell and also taste the food, with an open kitchen behind the bar. It should have the feeling of a really good Italian or Spanish bar, but the fare here should be more varied, also offering classic Swedish dishes and delicacies, such as salmon, white fish roe and the likes, as well as international brasserie classics, along with the Italian dishes. There should be freshly made tapas and snacks on the counter when you sit down for a drink.
Here you should be able to order a freshly cooked, top class meal around the clock, not just the hotel guests, but anyone. I'll never forget the wonderful feeling when I was in Paris partying with my friends as a young lad, and we went for a meal of pig trotters and oysters at six in the morning after the nightclubs had closed. Just imagine how much better you'll feel the morning after if you've finished off your night on the town with a freshly cooked carbonara and a glass of Chianti instead of a street burger and a nightcap from the minibar."
